I prebook first couple and last couple of days as part of package, and get the middle time free, as I usually have special places to go to Ubud and elsewhere.
One thing also, is that with packages, you pay per person. Direct with the hotel, you pay for the room. And of course, if you don't like where you are you can always move on.
My last few trips to Ubud, don't think I ever had accommodation prebooked. Lonely Planet is also a good guide, as it now lists hotels by regions and by star ratings.
