I took my wife to the Source Spa at the Begawan Giri Estate in Ubud...it was a wonderful day in the most beautiful setting. The spa was really out of this world, expensive, but I cannot imagine a better setting (I believe it is regularly voted one of the best spas in the owrld by Conde Nast Traveller mag for what thats worth). You could combine it with a day / overnight trip to Ubud.
