Four nights in Ubud would be ideal.
Day 1: Visit the market and walk down Monkey Forest Road, checking out the shops and then have a quiet relax in the Monkey Forest near the bathing pool.
Day 2: In the morning visit the Neka Museum to see top quality Balinese paintings and woodcarving. Then walk downhill from there to Cafe Indus for an excellent lunch with a spectacular outlook.
Day 3: Hire "transport" and go out of Ubud - North to the volcano, or east to Candi Dasa. Both easy and interesting trips.
Day 4: By now you will have an idea of what you want to do in Ubud!
Each night visit a different restaurant and on one night go to the Balinese dancing. Ask at your hotel reception for details of the dancing. I am sure you will enjoy your time in Ubud.
