There is so much to do in Bali, I have been there many times and there is still so much I haven't seen.
Steve since it is your first time to Bali, you may be better off going on some organised tours. There are many tour operators around and you will be able to book day tours at your hotel, or you will see many tour operators in the street. If you want the names of some reputable ones just ask here, on the forum.
The tours available are so varied so it depends on what you are interested in. Like adventure? Try white water rafting, hiking or biking tours, diving or snorkeling. This is a good way to have some fun and see the scenery of Bali at the same time. Want to see the culture of Bali? There are village walking tours, cooking classes, Balinese temples and dancing to be seen. Into shopping? There are sooo many places to shop.
