I found that at some places you could save a lot, some not much, by just rolling up to the door. Not sure how it will work at the big hotels, as I never stay in them. Perhaps the advantage is with the more out of the way hotels (this is what I've found anyway).
The hard part is lugging all your stuff into a hotel, especially after a flight, and bargaining convincingly. Get the taxi to stay if possible, just for the theatre of it all.
If you look tired and over-burdened, like you won't turn around and go to the next hotel, then the advantage is with them I guess. I love the ambiance of the Restu Bali in Legian, and I haggle over the net before I go.
