You wont know where to start, Stevo! Ubud has more great restaurants than you can shake a stick at. I was there last year and only got to a short list of them. This year my list has grown and I'm determined not to go any one place twice.
My favorite restaurant (so far) is Batan Waru on Jl Dewi Sita off Monkey Forest. There is also a great Thai place (Swasdee?) on Monkey Forest at the sanctuary end. I also enjoyed Casa Luna -- great place to stop mid-day for a banana lassi and a fresh pastry. If you want fresh Tuna Sashimi try Naughty Nuris Warung on a Thursday night. They also have great burgers I hear.
Places I'l be checking out this year include: Dirty Duck, Red Rice, Ary's Warung, Terrazo, Miros and Gjah Biru Cafe India ... just to name a few...
Try doing a search for Ubud in the archives and scour JB reports for more recommendations...
