It's a bit of a mish mash.
Most shops, restaurants, etc charge in Rp but many are happy to accept the greenback (at a bad rate) if that's all you got.
Shops and restaurants in the "official" tourist areas like Nusa Dua, inside the 5* hotels, and your travel agent when trying to flog you optional tours, will all probably want US$.
