I would think nothing less than 10 days. Probably around 2 weeks (adding on a couple of days to compensate for travel time from USA). It all depends if you want to travel around or are content to check out a couple of places and relax more.
I noticed you mentioned car rental. Driving in Bali can be a little hectic so be prepared! A lot of people who visit Bali hire drivers for days trips. It is inexpensive and less stressful.
Ubud is a nice area but not close to the beach. Some really gorgeous/exotic hotels in the area.
