Doing any business here in Bali is fraught with problems but possible if you have good connections with loyal and honest people, however very often people here get taken for a ride by locals who seize any opportunity they can to make a quick buck.
Your son will need proper documentation to obtaina temporary residence visa which will allow him to stay for up to 12 months but there are lots of regulations that pertain to sucha visa and I doubt very much that a cafe that is only worth 60m Rp would be able to provide the neccassary paperwork. The temp residence visa costs 4mRp+1200$ tax in adavance and now their are moves afoot to charge all us expats 35% of our worldwide income!!!!(thank god they are all corrupt!)
I think that you should think strongly before going into any business relationship in this country as you dont have ANY legal comebacks should you get defrauded etc.
