Talk to the chef at Gajah Biru Cafe India in Penestanan (Ubud). Her name is Siti, and she knows everything about Indonesian and Indian cooking. She's lived in the States and her English is excellent. Her restaurant is fantastic and her Indonesian cooking is out of this world too. Her mother is famous in their village in Java for her gado-gado, so it must be hereditary.
