I've been to Bali several times and am going back again in October and January. My best advice is to take Pounds Sterling in clean large notes. Dollars are fine but you will lose out twice on the exchange rates.
Probably the best thing to do is to change a small amount of sterling into Rupiah at the airport when you arrive and then look around for a better rate. Take heed of the various warnings posted on here with regard to checking the the money when you do change it however.
